Friday, potluck at church. I think I'll bring flautas.


Ground Beef Flautas                                            

1 lb ground beef
1 ( 8 ounce jar) picante sauce
¼ tsp. cumin
36 corn tortillas*
Shredded cheddar and jack cheese

Preheat oven to 350
Cook ground beef in skillet, drain fat.
Mix cooked beef, salsa and cumin in bowl.
In small skillet over medium-high heat, place tortilla in oil for 1-2 seconds on each side to soften. Place on plate with paper towel. Repeat for all tortillas.
Put small amount of beef mix in center of tortilla, sprinkle with cheese and roll up.
Place rolled tortilla on greased cookie sheet. Sprinkle cheese on top.
Place in oven for 15 to 25 mins, until tortillas are a little crispy and golden brown.

Use flour tortillas as an easier option

Chili Chicken Soup with Cilantro dumplings

Sunday
Moroccan Spiced Beef

2 tbs cumin seeds
2 tsp coriander seeds
2 lbs beef stew meat
1 onion, chopped
4 carrots, chopped
4 parsnips, peeled, chopped
4 cloves garlic, minced
1 tsp peppercorns
1 cinnamon stick
2 tbs flour
1 can diced tomatoes
1 1/2 cup beef broth
1 tbs lemon juice
1 tbs tomato paste
1/2 tsp cayenne

Cook seeds dry over medium heat, 3 mins. Set aside and put in spice grinder.
Add all ingredients to crock pot except lemon juice and cayenne. Cook low 8 hrs. Add lemon juice and cayenne and stir. Serve over couscous.
